Easy pizza at home
One of our absolute favorite easy dinners is to make pizza. We have a bread machine that acts as a glorified dough maker. I use this bread machine dough recipe, which takes about 5 minutes to throw together.
I like to keep pizza sauce around in the fridge, it’s always better when it’s been resting. The recipe I use is super easy to make, and uses stuff we keep in the pantry at all times, which makes it better. Last night I made this right after we threw the dough ingredients into the bread machine.
1 6oz can tomato paste
1 cup warm water
1/2 tsp basil
1/2 tsp oregano
1/2 tsp marjoram
1/2 tsp black pepper
1/2 tsp red pepper flakes
1/4 tsp salt
1/4 tsp cayenne
3 Tbs grated Parmesan
Mix together tomato paste and water. Stir in the next 7 ingredients, then mix in Parmesan. Refrigerate for at least an hour, but preferably a day or two.
Once the dough is ready, is gets molded into a ball, weighed, and divided. I’ve used this recipe for anywhere from 2-4 pizzas, it makes 4 personal sized pizzas beautifully. It can often be really wet, so the best bet is to work in enough flour that it’s not hugely sticky anymore.
Put your baking stone in the oven and preheat the oven to 500°.
The dough gets rolled out, and put onto a parchment circle dusted with cornmeal. What I found through a lot of trial and error is that the parchment makes it really easy to prepare multiple pizzas at once, and makes it easy to transfer to and from the pizza stone. We did both calzones and pizzas last night. The calzones get sauced on one side, fill with whatever you like, then fold to seal and cut a vent. My pizza got sauce, mozzarella fresca, spinach, shitake mushrooms, and kalamata olives. My cooking partners all made meat lovers calzones.
Bake until the edges are golden and everything looks bubbly. Enjoy! We watched the Dark Crystal and ate pizza, and it was awesome.
